Sundae Glasses - A Retro Classic
Ice cream sundaes are as american retro as Happy Days and The Fonz. Think of ice cream sundaes and you'll think of american diners, drop top cars, boys with greased back hair and leather jackets and girls in long skirts and cardigans. Or if you are of 'a certain age' you'll almost certainly think of Italian ice cream parlours and cafe cruiser motorcycles, mods and rockers at Brighton (or Hastings, where a great Italian restaurant still exists on the seafront).
But ice cream sundaes can be part of a modern restaurant or cafe experience - they don't have to be calorie-heavy monstrosities, they can also be fruity and healthy (to an extent!).
Presentation is the main thing - to present a decent ice cream sundae make sure it is presented in a a quality glass dish - there are a wide variety of sundae glasses available to the caterer, in traditional tall glass shapes or more modern ice cream bowls and dessert glasses.
There are also polycarbonate varieties available, absolutely ideal for outdoor catering as they won't break like glass can - and hence won't cause injury either. Using a quality heavy glass will always impress the customer, but make sure the glass is easy to clean, preferably dishwasher-proof if you will be using these in bulk.
There are different classic recipes to chose from, and a unique vessel for each one - as well as sundae glasses there are ice cream bowls, americano dessert glasses and of course the famous big brother - the knickerbocker glory glass. Do your research on the web and find the recipe, then find the glass for the recipe. That way you won't be trying to fill wide cups with small berries, or trying to stick large chunks of fruit into a tall thin glass. When looking at these recipes consider your bottom line - ice cream is the cheapest part of the dessert, so don't fill the sundae glasses with expensive fruit topped off with a small amount of ice cream - use the cheaper ingredient as the bulk.
